Woodears – also known as the Jew’s ear or jelly ear – are a species of edible mushrooms found throughout the year in temperate regions worldwide. The bodies are distinguished by their noticeably ear-like shape and brown coloration, and the mushrooms grow on wood – especially elder.
Woodear Mushroom Flavor
Woodears have a soft, jelly-like texture and a mild flavor.
Woodears are inedible when raw and need to be cooked thoroughly. They are often dried and rehydrated, sometimes swelling to a very large size, and are good for mixed mushroom recipes.
